Though our family generally has very healthy eating habits, every now and then we just have to splurge. Hubby made a cookies & cream ice cream cake for a party a while back and it didn’t last long! I decided to prepare one myself today and share the steps because this dessert is so easy, fast, and delicious that I know many of you would enjoy. And if I can make it anyone can!
You only need three ingredients for this super easy Cookies & Cream Ice Cream Cake:
- 12 ice cream sandwiches
- 1/2 regular size pack of Oreos
- 2 cups Cool Whip
**BONUS: This recipe can be made gluten free and/or dairy free by substituting the type of “ice cream” sandwiches and cookies used.
PREP TIME: 10 Minutes
“BAKE” (aka FREEZE) TIME: 1-2 hours
STEP 1: Chop 1/2 pack of Oreos in food processor until finely ground. (Our Hamilton Beach Food Processor has lasted us years!)
STEP 2: Add ground Oreos to mixing bowl containing 2 cups Cool Whip.

STEP 3: Fold ground Oreos into Cool Whip until well combined– this is the frosting.

STEP 4: Place non-stick baking mat over a cookie pan. (We use these Effiliv Non-Stick Silicone Reusable Baking Mats for just about everything!)
STEP 5: Place four ice cream sandwiches together in center of baking mat. Spread a layer of frosting on top.

STEP 6: Repeat with two more layers of ice cream sandwiches.

STEP 7: Frost the top and sides of cake.

STEP 8: Allow cake to set in freezer for 1-2 hours. Remove from baking mat. Slice and enjoy!

Ingredients
- 1/2 package Oreos or similar sandwich cookies
- 12 ice cream sandwiches
- 2 cups Cool Whip or similar whipped topping
Instructions
- Chop cookies in food processor until finely ground.
- Add cookie powder to a large mixing bowl containing 2 cups Cool Whip.
- Fold cookies into Cool Whip; this will be the frosting.
- Lay 4 ice cream sandwiches on a non-stick baking mat and cover with frosting.
- Repeat with 2 more layers of sandwiches.
- Use remaining frosting to cover the entire cake.
- Freeze for at least 2 hours & enjoy!

I like more filling and frosting so
I used 3 cups of cool whip and 2/3 of the cookies.

Love this recipe, wanted more texture in icing( cool whip ) so I used wax paper and rolling pin over cookies for chunkier bites, also used more cool whip. My granddaughters loved it.

Do you cover it with anything while it’s freezing?
You don’t have to for the hour or two that it takes the dessert to set. If you’re going to be keeping it in the freezer to enjoy over a few days, you might want to cover to protect it.

Hi Edleide! It really depends on how large you’d like the servings to be, but I think you could get 6-8 slices.
Could I double the recipe to make a bigger cake? We have a big family and want to make sure everyone gets to enjoy.

Can you freeze it for more than 2 hours
If so do you need to cover it
Hi Sue – You can freeze for more than two hour uncovered, but if you’re not going to finish it within 24 hours I would cover.
