A cool & colorful LEGO Rice Krispie Treats recipe that will make your kid’s day! (Or yours!)
This recipe is for all my fellow LEGO fans out there! Growing up, I created a LEGO world that pretty much took up half of our basement. My brother, sister, and I would play for hours every day. We even filmed LEGO stop-action “movies” (don’t ask! LOL).
My girls love all the new LEGO movies (the real movies), so it is fun to share one of my favorite childhood memories with them. These LEGO Rice Krispie Treats make me so happy! They’re perfect to make with kids or to serve at a birthday party. And they’re easy!
LEGO Rice Krispie Treats Ingredients
For the Rice Krispie Treats:
- 6 cups Rice Krispies cereal
- 10 oz mini marshmellows
- 3 tablespoons butter
For the LEGO Topping:
- 3 egg whites
- 1 tsp vanilla
- 1/2 tsp cream of tarter
- 3 C powder sugar
- Red, blue, & green gel food coloring
- Red, blue, & green M&M’s

For the Rice Krispie Treats:
Cover the inside of a 9″ x 9″ baking pan with wax paper. (You want to make sure the wax paper covers the sides of the dish as well as the bottom). Apply a light coating of baking spray and set aside.
Place butter in a medium sauce pan and begin to melt over medium heat. Once butter is liquid, add mini marshmallows and stir until melted.
Remove pan from heat and mix in Rice Krispies cereal until evenly combined.
Scoop Rice Krispie treat mixture into the pan you already prepared. Cover with a sheet of wax paper and press down to form mixture to the shape of the pan.
Set covered Rice Krispie treats in fridge until cooled. (Around 15-30 minutes)
For the LEGO topping:
Combine all ingredients (except the gel colors and M&M’s) in a stand mixer and mix on medium speed until well combined and smooth. (If icing is not bright white at this point, add another 1/2 cup of powdered sugar).
Split icing evenly into 3 small mixing bowls. Add a couple drops of gel food coloring to each bowl (one color per bowl) and stir. Continue adding gel color drop by drop until your icing is the desired shade.
Put it all together:
Once Rice Krispie treats mixture is cool and set, cut into small rectangles. Dip the top of each individual treat into one color icing.
Set on a baking sheet (we love these reusable non-stick silicon baking mats) and place 6 M&Ms in the same color of the icing on top of each treat to look like a Lego block.
Allow to sit for an hour until icing hardens.
