Easy Brownie Popsicles

I like ’em both! Actually, brownies are just one of my favorite desserts period!
These brownie popsicles are one of my favorite recipes that we’ve ever posted on here! Not because it’s a ground-breaking recipe, but because they’re just so darn cute! And even better, they’re easy to make!
We started with rich fudge brownies, dipped them in colorful chocolate and sprinkles, and then put the brownies on popsicle sticks.
Don’t they look like popsicles? I just love them!!
These brownie popsicles are perfect for birthdays, parties, or just hanging out with the family at home! This is also a great recipe to make with kids!
Ingredients

- 1 box fudge brownie mix (plus ingredients listed on box)
- Brown candy melts or chocolate chips
- Pink candy melts
- White candy melts or melting chocolate
- Jimmies or sprinkles
Kitchen Tools Used
- Popsicle sticks
- Cookie sheet
- Parchment Paper or Non-stick silicone baking mats
- Microwave safe bowls
Instructions
Prepare brownies according to directions on box. We love chewy, fudge brownies — feel free to use your favorite box mix or homemade brownie recipe!
After baking, cut brownies into six rectangles. When the brownies are completely cool, trim the top of each rectangle into a rounded edge to resemble the shape of a popsicle.
Pour each color of melting chocolate into its own microwave safe bowl. Heat each bowl separately for 30 seconds at a time, stirring in between, until chocolate is completely melted.
Dip brownies in the pink, white or milk chocolate, leaving about 1/2 inch at the bottom of the brownie uncovered.
While chocolate coating is still wet, cover with sprinkles or jimmies. Allow to set.
Gently push a popsicle stick into each brownie at the end that you left with no chocolate. Enjoy!

How Many Popsicles Does this Make?
We made 6 big brownie popsicles with one box of brownie mix. If you cut your brownies smaller, you might yield more. You also might not need 2 full cups of candy melts/chocolate to coat all your brownies. We just made a little extra to be on the safe side.
Can You Use Brownies from Scratch?
Sure! We used a box mix to save time, but if you have a go-to brownie recipe, feel free to use that!

Can You Make them Gluten Free?
You bet! Feel free to substitute with gluten free brownie mix! You can also try them with our avocado brownies recipe.
Do The Brownies Need to be Refrigerated?
If using our avocado brownies recipe, I’d recommend keeping them in the freezer. Just let them thaw a little bit so they are soft enough to bite into.
Otherwise, simply keep your brownie popsicles in an airtight container at room temperature. Avoid storing them near light or a heat source or anything that could cause them to melt.
They should last about 3-5 days…if you don’t enjoy them all first!

Thick chocolate coating should help hold them together – you might also look for a brownie mix or recipe that you know is a bit on the dense side as opposed to crumbly.
