Swirling stars and vibrant colors make these Galaxy Cake Pops a wow-worthy party treat!
Easy Galaxy Cake Pops
Growing up I was obsessed with all-things-space-related! I spent countless hours flipping through books and memorizing space trivia and facts.
I still have my collection of favorite space books, and even though they are a bit outdated, my youngest daughter has taken an interest in them (yay!!!) Now she is the one memorizing space facts and I love it!
These galaxy cake pops are the perfect sweet treat for you own budding astronaut or space fan. They’d also be great for a Star Wars themed party!
Cake pops are one of my daughters’ favorite things to get when we pop into our local Starbucks, and I like them because their small size is just right (unlike a lot of the jumbo desserts everywhere these days!)
I was surprised how easy it is to make cake pops at home — even with the amazing tie-dye “galaxy” decorations! I’ve included photo step by step directions in the post so you can see exactly how it’s done. Enjoy!

First, start by making the cake pops:
To save time, we use pre-made (unfrosted) cupcakes. You can also bake a quick cake using box mix.
Crumble up your cake or cupcakes and fold together with vanilla frosting in a large mixing bowl until you have a batter-type consistency.
TIP: Make your galaxy cake pops gluten free with our GF vanilla cake mix that we used for these Cherry Jelly Donut Cupcakes!
Roll cake mixture into 2-inch balls and place on a baking sheet lined with parchment paper or a non-stick silicone baking mat (one of our absolute favorite kitchen tools!) You should have enough batter to make about 12 cake pops.
Melt the white chocolate according to package directions and dip the end of each lollipop stick into it. Push the chocolate end of each stick into a cake ball and set them in the freezer for about 20 minutes.
Now decorate your cake pops galaxy style:
Melt each of the colorful melting chocolates in their own separate bowls, according to package directions.
Use a spoon or form to drizzle some of each of the colors of chocolate on the top of the bowl of melted white chocolate. Try to spread them out so all the colors are visible, as well as the white chocolate beneath them.
Dip a cake pop into the melted chocolate until it is completely coated. Allow excess chocolate to drip back into bowl. Sprinkle your cake pop with the gold stars and/or silver sugar.
Allow chocolate coating to set completely.
TIP: Drying your cake pops upright will keep them completely round. Push the sticks into a foam block to hold them in place.
Repeat decorating steps with all of your galaxy cake pops.

Ashley says
How early in advance can you make these for a party? Night before?
Stacey aka the Soccer Mom says
You could definitely make these a day ahead! The chocolate coating protects the filling.
Sarah says
Should these be stored in the fridge if made ahead?
Stacey aka the Soccer Mom says
I probably would — the chocolate coating should keep the cake from drying out like it normally would in the fridge.
