Healthy Pumpkin Brownies

These healthy pumpkin brownies are made with simple, real food ingredients and no refined sugar, but they taste like a total treat!

My husband is the chef in our family and one of his talents is creating better-for-you versions of my favorite foods. Brownies are one of my go-to desserts (I’m a total chocoholic) so he decided to make me a batch of guilt-free brownies. Y’all…these are amazing!!

Even though pumpkin puree is one of the main ingredients, they don’t taste like pumpkin. I love all the pumpkin spice recipes during the fall season, but not necessarily all year long. For this recipe we wanted to make sure that they taste like chewy chocolate brownies and I definitely think we succeeded!

These are rich, ooey-gooey fudgy brownies that you can indulge in without worrying about refined flour and sugar or oil…because there’s NONE of that in this recipe! That’s right…NO flour…NO refined sugar…NO oil! The moist texture comes from the bananas and pumpkin and the brownies are naturally sweetened with honey and dates.

They kind of look like you crossed a granola bar with a brownie, but I promise you, this is a decadent tasting dessert and you’re going to love this recipe if you’re trying to eat more plant-based foods and cut out refined sugars!

What Makes These Brownies Healthy?

There are so many reasons to whip up a batch of these healthy brownies next time a chocolate craving strikes!

  • 8 grams of protein each, with no protein powder added!
  • 5 grams of fiber per serving, so you’ll feel satisfied longer.
  • No refined sugar!
  • No oil or butter!
  • No flour!
  • Gluten-free (just be sure to check labels to use products produced in a gluten free facility)
  • Excellent source of Vitamin A
  • Good source of healthy fats
  • Contains minerals such as calcium and potassium

  • 2 ripe bananas, mashed well
  • 1 cup canned pumpkin puree
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 2 cups old fashioned oats
  • 1/2 cup cocoa powder
  • 3 TB date syrup (or maple syrup if you canโ€™t find date)
  • 1/2 cup milk
  • Optional: 1/2 cup chocolate chips

Instructions

To Prep: Preheat oven to 320ยฐF and line a square baking pan with parchment paper.

  1. Whisk together dry ingredients in a large bowl.
  2. Combine wet ingredients in a separate bowl.
  3. Add dry ingredients to wet ingredients, stirring until just combined. If using chocolate chips, fold them in now.
  4. Scoop batter into prepared pan and spread with spatula until even. Bake 40 minutes at 320ยฐF.

Prep Tips

  • Peanut Butter – This can be substituted for another type of nut butter, such as almond butter or cashew butter. If allergies are a concern, you could substitute sunflower seed butter instead.
  • Milk – For this recipe I use plant-based milk, such as almond milk or oat milk. However, you can use regular dairy milk if you prefer.
  • Pumpkin – Be sure to use 100% real pumpkin or pumpkin puree. Do not use “pumpkin pie filling” as this contains added sugars and spices.
  • Mix-ins – I like to add a handful of chocolate chips to the brownies, but this is totally optional! Look for chocolate chips made without refined sugar to keep the brownies healthy. If making for the kids I just use regular chocolate chips because the kids love ’em and they get all the healthy benefits of the brownies too. Another yummy addition are chopped nuts, such as pecans.
  • Serve With – These brownies are tasty all on their own as a handheld treat. However, they are amazingly decadent when topped with a scoop of vegan ice cream or a sugar-free chocolate drizzle!
  • Storage – Keep brownies in an airtight container at room temperature for 2-3 days. You can also store in the refrigerator to keep them another day or two longer.
