Blackberry Pie Bars

Growing up, we had a blackberry bush in our backyard. It was so much fun to pick berries straight off the vine and enjoy them on the spot!

I still have a soft spot for all things blackberry, and these Blackberry Crumble Bars are a taste of my childhood!


– flour – sugar – lemon zested – unsalted sweet cream butter  – eggs, slightly beaten

Preheat oven to 350°F and line a 9x13 baking dish with parchment paper. In a standing mixer, add flour, sugar, and lemon zest.


Mix until combined. Add butter and continue mixing. Stop the mixer and use your fingers or a fork to break up the butter into smaller pieces. Resume mixing.


Add eggs and continue mixing until a crumbly dough begins to form. Set aside. Add blackberries, lemon sugar, cornstarch and sugar to a large mixing bowl and stir together.


Press half of the dough into the bottom of the backing dish. Pour blackberry mixture over the crust and speed with a rubber or silicone spatula until evenly distributed.
