INGREDIENTS

– olive oil – broccoli florets – cauliflower florets – onion chopped – celery chopped – carrots

Add the oil to a large saucepan over medium heat. Stir the broccoli, cauliflower, onions, celery, and carrots into the oil in the pot. Sauté until the vegetables are beginning to soften.

Mix in the garlic, ginger paste, turmeric, ground thyme, and salt and pepper to taste.

Pour in the diced tomatoes and veggie broth. Stir to combine.

Cover and simmer for 45 minutes or until the vegetables are softened. Mix in the kale, and simmer until wilted.
