These mini cheesecakes are perfect for summer gatherings! Individual servings are so much easier than having everyone try to dig into a communal dessert!
For the Crust:
- Graham cracker crumbs - Sugar - Unsalted butter
For the Cheesecake Filling:
- Cream cheese - Sugar - Sour cream - Pure vanilla bean paste - Eggs - Pureed blackberries
To Make the Crust:
Preheat oven to 325 degrees and place cupcake liners in your muffin tin.
Whisk together the graham cracker crumbs, sugar and melted butter until you have a mixture with the texture of wet sand.
Scoop 1 1⁄2 Tablespoons of the crust mixture into the bottom of each cupcake liner. Press down to make the crust firm and even.
