Preheat oven to 350°F.
Line a 9x13" baking pan with parchment paper. Stir together graham cracker crumbs, butter and green food coloring in a large mixing bowl.
Press this mixture into the bottom of your prepared pan to form your crust. Beat together cream cheese and sugar using a stand mixer or electric hand mixer.
Add eggs, one at a time, mixing as you go. Add vanilla extract. Stir in 3/4 cup of mint chocolate chips by hand, then pour this cream cheese mixture into pan on top of your crust.
