Sweet Soy Glazed Chicken & Broccoli

This sweet soy glazed chicken stir-fry recipe is simple, full of  veggies, and done in 30 minutes — perfect for a weeknight dinner.

It’s even gluten-free and a one-pot meal! The girls loved this recipe too; together we almost finished the entire pan!

INGREDIENTS

– boneless chicken thighs, cubed – broccoli, chopped – onion, quartered – sliced carrots – sliced mushrooms

Add chicken to a large sauté pan with a tablespoon of cooking oil. Cook over medium heat with a pinch of  salt and pepper until chicken is a little more than halfway done.

While chicken is cooking, add soy sauce, 1 cup chicken broth, brown  sugar, ginger, and cornstarch to a small saucepan and cook on medium-low  heat, stirring occasionally.

Add onions, peppers, and carrots to sauté pan and cook until they start to caramelize (about 4-5 minutes).

Add broccoli, mushrooms, and 1/2 cup chicken broth to sauté pan and cook for an additional 3-4 minutes.
