This sweet soy glazed chicken stir-fry recipe is simple, full of veggies, and done in 30 minutes — perfect for a weeknight dinner. It’s even gluten-free and a one-pot meal!

Ingredients: - Boneless chicken thighs - Broccoli - Onion - Carrots - Mushrooms - Green onion - Red bell pepper - Soy sauce - Chicken broth - Brown sugar - Ginger - Corn starch

INSTRUCTIONS Add chicken to a large sauté pan with a tablespoon of cooking oil. Cook over medium heat with a pinch of salt and pepper until chicken is a little more than halfway done.

While chicken is cooking, add soy sauce, 1 cup chicken broth, brown sugar, ginger, and cornstarch to a small saucepan and cook on medium-low heat, stirring occasionally until sauce begins to thicken.

Add onions, peppers, and carrots to sauté pan and cook until they start to caramelize (about 4-5 minutes).
