Ingredients
Cookie Ingredients
2cups all purpose flour
1 1/2teaspoonsbaking powder
1/4 teaspoonsalt
1/2cup unsalted buttersoftened
3/4cup granulated sugar
1 egg
1/3cuporange juice
1 1/2teaspoonsvanilla extract
Zest of two oranges
Orange Icing:
2cups powdered sugar
3-4 Tablespoonsorange juice
Zest of one orange
Instructions
To Make the Cookies
Preheat oven to 350°F and prep a large cookie sheet with a non-stick silicone baking mat.
In a medium mixing bowl, whisk together flour, baking powder and salt and set aside.
In the bowl of a stand mixer, cream butter, sugar and orange zest until fluffy (about 3 minutes).
Add the egg, orange juice, and vanilla, mixing as you go.
Reduce mixer to low speed and slowly add in the dry ingredients. Continue mixing until well incorporated, scraping the sides of the bowl as needed.
Roll dough into balls, about 1 large Tablespoon of dough each. Place on your prepared baking sheet, about 1-2 inches apart.
Gently press down the tops of the dough balls so they're flatter in shape.
Bake for 8-10 minutes, watching closely, until the cookies are just beginning to turn golden brown on the edges.
Remove from oven and allow cookies to cool on the pan.
To Make the Icing:
Add icing ingredients to a large mixing bowl and whisk vigorously to combine.
Once cookies have cooled, drizzle icing on top of the cookies and allow to set.
