Baking sheet with parchment or silicone baking mat
Cream butter and sugar together in the bowl of a stand mixer or in a large bowl with an electric hand mixer.
Mix in the egg and vanilla until smooth and creamy.
Add baking powder. Gradually add the flour, mixing on low speed, until well combined. - mix on low speed until well combined.
Place the dough on a long piece of plastic wrap and form the dough into a log about 2 ½ inches in diameter. Wrap the dough tightly and chill in the fridge for at least 30 minutes to an hour.
To Make The Cookies
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
Remove the cookie dough from the refrigerator and cut into 1/2-inch wide slices.
Place the cookies on the prepared pan and bake for about 8 minutes, until the edges start to just turn golden brown.
Allow cookies to cool completely before decorating.
To Decorate The Cookies
Add the chocolate chips and coconut oil to a microwave-safe bowl and heat in 30-second intervals, stirring between, until melted and smooth.
Scoop the melted chocolate into a piping bag with a narrow tip.
Use the melted chocolate to draw the reindeer antlers, two eyes, and one small dot for the nose on the top of each cookie.
Place one red M&M on top of the wet chocolate nose and allow to set.
