Ingredients
For the Sweet Potato Donuts

cup
sweet potato
cooked
1
cup
brown rice flour
1
cup
sweet potato starch
1
cup
brown sugar
1
teaspoon
baking powder
1/2
teaspoon
baking soda
1
cup
mayonnaise
1/2
cup
coconut oil
5
eggs
Toppings:
Curly's BBQ
1/2
cup
sour cream
1
stalk
green onion
chopped
Instructions
For the donuts:
Preheat oven to 350°F. Add sugar, oil, mayonnaise, and eggs to mixer and beat until well combined.
Add rice flour and sweet potato starch and continue mixing until those ingredients are fully incorporated.
Add cooked sweet potato and continue mixing until incorporated into the batter.
Add baking soda and baking powder and mix until all ingredients are well combined.
Pour into silicon donut molds and bake for 20 minutes at 350°F.
Transfer donuts to a wire cooling rack.
Toppings:
Heat Curly's BBQ in a medium skillet for about 5-7 minutes, stirring occasionally to thicken sauce.
Using tongs, generously cover each of the sweet potato donuts with your barbecue.
Scoop sour cream into a plastic squeeze bottle and apply to donuts in a zig-zag pattern on top of the barbecue.
Finish each barbecue donut with a sprinkle of chopped green onion.
