Ingredients
3medium sweet potatoes
1egg
1cupalmond flour
1/2teaspoonsalt
1teaspoondried oregano
1teaspoondried basil
1teaspoongarlic powder
1tablespoonapple cider vinegar
1-2cupsshredded chicken
1cupspinachchopped
1/2cupcheesewe used non-dairy veggie cheese
1/2cupbuffalo sauce
sliced green onionfor garnish
Instructions
Pre-heat oven to 400°. While oven heats, cook sweet potatoes in microwave until soft.
Peel sweet potatoes and add to large mixing bowl with: 1 cup almond flour, 1 egg, 1/2 teaspoon salt, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1 teaspoon garlic powder, and 1 tablespoon apple cider vinegar. (For an extra kick, add a pinch of chili powder.) Mash ingredients until well combined and the mixture takes on a doughy consistency.
Use rubber spatula to spread on a Pizza Stone (you could also use a Silicon Baking Mat like we did for our square-edged pizza.)
Cook dough at 400° for 30 minutes. While pizza dough is baking, shred your chicken and chop spinach. Toss chicken in a large mixing bowl with 1/2 cup buffalo sauce until well coated.
Remove pizza dough from oven and layer ingredients: chopped spinach, buffalo chicken, and shredded cheese.
Return pizza to oven and bake for an additional 10 minutes. Drizzle with additional buffalo sauce, if desired, and top with chopped green onions. Slice and enjoy!
