Place one cookie on a plate as the base of your ice cream sandwich. (If using our recipe for chocolate avocado cookies, use 2TB batter for each cookie instead of 1TB).
Cut pint of Swell Ice Cream into 3 "slices," cutting right through the carton.
Layer one Swell Ice Cream slice on this cookie and remove the carton wrapped around the ice cream.
Top with a second gluten free chocolate cookie and enjoy!
