1barstevia sweetened dark chocolate(about 85 grams)
2Tablespoonunsweetened cocoa powder
1Tablespoonerythritol
4egg yolks
Instructions
Bring coconut milk to a boil in a saucepan.
Chop up chocolate into small chunks - set aside about 1 Tablespoon of chopped chocolate.
Add chocolate and dry ingredients to blender and pulse for 30 seconds.
Add egg yolks and blend until creamy (another 30 seconds).
Slowly add hot coconut milk, as you blend, until it is fully incorporated and smooth.
Pour into parfait cups and sprinkle the tops with the remaining crushed chocolate.
Refrigerate for 2 hours or until set.
