2Sweet bell pepperscut into 1/2 inch strips, then in half again
2 tomatoesde-seeded and chopped (or cherry tomatoes)
for the Marinade:
1teaspoonoreganodivided
2teaspoonsgarlic
2Tablespoonslemon juice
2Tablespoonsoildivided
Salt and pepperas desired
Instructions
Soak wooden skewers in water for 30-45 minutes.
Place pork cubes in a large plastic zip-top bag.
Whisk together the marinade together (1/2 teaspoon oregano, garlic, lemon juice, 1 T oil, salt, and pepper) and add to the bag of pork. Refrigerate for at least 30 minutes, making sure all the pork is coated.
Add prepped vegetables to a large bowl with the remaining oil and oregano, and a pinch of salt and pepper. Toss to coat the vegetables.
Preheat grill to 350°F or medium heat. Spray to coat or rub oil on the grill with an old kitchen towel (before the grill is hot).
Add pork and vegetables to skewers, alternating meat and veggies. Use 4-5 pieces of meat on each.
Spray the grill or wipe with oil and a kitchen towel if you feel it's necessary.
Place the skewers on the grill and cook for 10 – 12 minutes, rotating halfway through, until the pork is cooked through and the vegetables are tender. Pork should have an internal temperature of at least 145°F.
Remove from the grill and allow to rest a few minutes before serving.
