Chocolate Chip Zucchini Bread

Perfectly moist and studded with chocolate chips, this chocolate chip zucchini bread is a delectable sweet treat that hides a full serving of veggies!

INGREDIENTS

– all-purpose flour – salt – baking soda – baking powder – granulated sugar – vegetable oil

Preheat oven to 350°F, grease your loaf pan, and line it with parchment paper. In a small bowl, whisk together the flour, salt, baking soda, and baking powder together until well combined. Set aside.

In a bowl, mix together the sugar and vegetable oil, until the sugar is fully dissolved and the mixture is light and fluffy. Beat in the eggs for 30 seconds, then mix in the vanilla extract.

Pour the contents of the bowl of wet ingredients into the bowl of dry ingredients and stir until just combined. Stir in the grated zucchini, then stir in the chocolate chips.

Pour the zucchini bread mixture into the prepared pan. Bake for 45-50 minutes, or until a toothpick inserted in the middle of the bread comes out clean.
