Ingredients
For the sweet potato donuts:
1cupsweet potatocooked
1cupbrown rice flour
1cupsweet potato starch
1cupbrown sugar
1teaspoonbaking powder
1/2teaspoonbaking soda
1cupmayonnaise
1cuporganic coconut oil
5eggs
For the apple pie glaze:
1cup Santa Cruz Organic Cinnamon Apple Sauce
1stickbutter
1cuppowdered sugar
2appleschopped
1teaspooncorn starch
Instructions
How to Make Sweet Potato Donuts
Add sugar, oil, mayonnaise, and eggs to mixer and beat until well combined.
Add rice flour and sweet potato starch and continue mixing until fully incorporated.
Add cooked sweet potato and continue mixing.
Add baking soda and baking powder and mix until all ingredients are well combined.
Pour into silicon donut molds and bake for 20 minutes at 350°F.
Transfer donuts to a wire cooling rack until you're ready to glaze.
How to Make the Apple Pie Glaze:
Add butter, sugar, and apple sauce to a medium sauce pan and melt together over low heat, stirring continuously.
Once glaze is a rich brown, add chopped apples and stir incorporate. Continue cooking at low heat for 10 minutes to soften apples. Stir occasionally to glaze from burning.
Add one teaspoon of cornstarch and cook for an additional 3-4 minutes, stirring until sauce starts to thicken.
Remove from heat and allow glaze to rest until it is cool enough to handle.
To Glaze:
Scoop glaze into a frosting piping bag (or a plastic freezer bag with one corner cut off) for easier application. Generously coat the top of each donut with the apple pie glaze.
