Easy Garlic & Herb Crockpot Mashed Potatoes

No need to cook mashed potatoes on the stove top when you can cook them in the crockpot!

Ingredients

  • 4 – 5 lbs potatoes peeled
  • 1 cup chicken broth
  • ¼ cup butter
  • 2 tsp garlic minced (feel free to add up to a tablespoon if you really like the taste of
  • garlic)
  • 1 tbsp Italian seasoning
  • salt and pepper to taste

Instructions

  1. Place peeled potatoes into the slow cooker, add the chicken broth and cover. Cook on low for 6 – 8 hours. If you can easily insert a fork into the potatoes with ease, they are ready for the next step.
  2. Add butter to crock pot, adding only ½ of the portion at first. With a masher, begin the mash the potatoes as fine as possible.
  3. Add the remaining portion of the butter, and continue to mash so they are smooth as possible. If you have an immersion blender, feel free to use it for this step for extra fine potatoes.
  4. Serve finished potatoes with a dollop of butter and a sprinkle of parsley if desired.
