Ingredients
1cupButtercold and sliced
1cupBrown Sugar
1/2cupWhite Sugar
2Eggsroom temperature
1tsp.Vanilla Extract
1 1/2cupsAll-Purpose Flour
1 1/2cupsCake Flour
1/2teaspoonSalt
1/2teaspoonBaking Soda
2cupsWhite Chocolate Chips
1cupRainbow Sprinkles
Instructions
Preheat oven to 410°F and line baking sheet with parchment paper or silicone mat.
Cream together butter, white sugar, and brown sugar for 2 minutes in a stand mixer.
Add the eggs and vanilla extract and continue mixing on medium until fully combined.
In a separate bowl, sift together the flour, cake flour, salt, and baking soda.
Slowly add the flour mixture to the butter mixture 1 cup at a time, mixing as you pour, until dough forms.
Mix in the white chocolate chips by hand.
Cover the bowl with plastic wrap and chill in fridge for 1 hour.
Divide dough into 6-8 portions and roll into balls.
Fill a small bowl with rainbow sprinkles and roll each dough ball in the sprinkles. Press sprinkles into the dough to secure them in place.
Place each dough ball on prepared baking sheet and gently press down to make the balls flat enough to stay in place.
Bake for 15-17 minutes, until about 3/4 of the way cooked through.
You want the dough ball to be 3⁄4 of the way fully cooked.
Remove from oven and cool for 5-10 minutes.
