Ingredients
1 1/2cupsall-purpose flour
1 1/4cupscake flour
1teaspoonbaking soda
1/2teaspoonsalt
1teaspooncornstarch
1teaspooncream of tartar
1cupcold buttercubed
1cupbrown sugar
1/2cupwhite sugar
2eggs
1teaspoonvanilla extract
2cupssemi-sweet chocolate chips
Instructions
In the bowl of a stand mixer, using the paddle attachment, cream together the butter and sugar for about 2 minutes. Add in the eggs and vanilla extract, mixing until incorporated.
In a separate mixing bowl, whisk together flours, baking soda, salt, cornstarch, and cream of tartar. Pour half of the dry ingredients into your bowl of wet ingredients, mix well, the add the remaining flour mixture. Mix until you have a well incorporated cookie dough.
Fold in the chocolate chips, then divide the cookie dough into 10 equal portions that are about 1/2 cup each. Place on the cookie sheet and press down to form flat discs that are about 1/2" thick. Chill dough in the fridge for 30 minutes.
Preheat oven to 400°F. Divide the chilled cookies between two lined baking sheets and bake for 14-16 minutes, until the edges just start to turn golden brown.
