In a large mixing bowl, combine the flour, salt, sugar. Incorporate butter and shortening, using a fork or pastry cutter (avoid using bare hands, as this will melt the butter). Add enough ice water to make the dough form a ball.
Flour a large surface and roll out the dough. Use large and small star-shaped cookie cutters to cut even numbers of small and large stars for the hand pies. (This set of six star cookie cutters gives you lots of options!)
Meanwhile, place the 2 cups fresh or frozen strawberries in a pot, along with the sugar, butter and water. Bring to a boil over medium heat and stir continuously, for 8 minutes.
In a separate pot, combine the blueberries, sugar, butter and water. Bring to a boil over medium heat and stir continuously, for 8 minutes.
Remove both pots from heat and allow to cool for about 10 minutes.
Spoon small amounts of the filling (the amount will depend on the size of your pies) into the center of half of the cut-outs and then sandwich a clean cut-out overtop. Leave enough space around the edges of the stars to seal.
Pinch the sides together to seal completely.
Place hand pies on a lined baking sheet and bake for 8-10 minutes until slightly golden.
Let the pies cool before combining the drizzle ingredients and spooning overtop of the pies in a quick zig-zag motion.
