For the Fish Fillet:

white fish fillets
such as cod or haddock

breadcrumbs

Instructions
Prepare the Fish
Cut the fish fillets into 3-4 individual portions and season with salt and pepper.
Dredge each piece in flour, dip in the egg wash, and then coat in breadcrumbs.
Heat oil in a large skillet over medium heat.
Fry the fish fillets for 3-4 minutes on each side, until golden and crisp.
When done frying, place the fish portions on a plate lined with paper towels to dry and soak up excess oil.
Make the Tartar Sauce
In a small bowl, whisk together the mayonnaise, pickles, lemon juice, and mustard.
Season with salt and pepper to taste.
Assemble
Lightly toast the buns.
Place one fish fillet on the bottom half of each bun.
Spoon tartar sauce on top of the fish. add a slice of cheese, and a lettuce leaf. Finish by topping with the other half of the bun.

Fish:
Use cod or other mild white fish like haddock. If needed, you could use pollock, tilapia, or catfish.
Shortcut:
Swap in frozen breaded fish fillets to save time.

Hamburger buns, brioche, or potato rolls all hold up well.
Storage:
