Ingredients
4cupsrotisserie chickenchopped
1cupasparaguschopped
1cupsugar snap peassliced
1/2small red onionsliced extra thin
1cupmayo
1package fresh dill
1/2tspsea salt
1/4cupgrated parmesan cheesein our case we used non-dairy veggie cheese
1/4cupslivered almondsoptional
1/4cupfresh chopped parsleyoptional
Instructions
Slice asparagus and sugar snap peas diagonally into pieces about 1" long each.
Lightly sauté asparagus and snap peas for about 5 minutes, just enough to soften slightly.
Pull meat from rotisserie chicken, shred into small pieces, and add to large mixing bowl.
Add cooked veggies, red onion, mayo, herbs, parmesan, and salt; toss until well coated.
Garnish with parsley and almonds if desired.
