For the Salmon
Vegetableswe used carrots, red/orange bell pepper, and broccolini
Salt & pepperto taste
For the Honey Sriracha Glaze:
2TBsriracha chili sauce
Preheat oven to 350°F.
Line a baking sheet completely with aluminum foil. Place salmon fillet in the middle of the foil and surround with vegetables.
Paint salmon fillet with Honey Sriracha Glaze, or sauce of your choosing. Sprinkle with a pinch of salt and pepper, as much or little as you prefer.
Fold sides of foil up and over the top of the salmon. The foil will not entirely cover the salmon fillet, but will cover most of the sides and all of the veggies. Use a smaller piece of foil to cover any open space and seal the salmon and vegetables inside.
Bake for 20 minutes at 350°F.
Remove top piece of foil so most of the top of the salmon is exposed. Finish in broiler for 5-7 minutes.
