Pumpkin Spice Chicken Curry

We already keep the semisweet variety on hand at home in case of any  spontaneous baking projects, but I was so curious about how the pumpkin  ones would taste!

My husband, ever up for a cooking challenge, claimed he could use them to create a Pumpkin Spice Chicken Curry.

INGREDIENTS

– chicken thighs cubed – white onion thinly sliced – fresh green beans – sliced carrots – medium potatoes cubed – NESTLÉ® TOLL HOUSE®

In large sauté pan, brown onions with garlic and coconut oil. While onions are caramelizing, in a medium saucepan, combine coconut milk, chicken broth, Nestles, curry paste, and sriracha.

Stir until smooth. Add chicken, vegetables, garlic powder, and onion powder to large sauté pan with onions.

Add curry sauce to sauté pan and cover.

Reduce heat to med-low and simmer for one hour. Serve over rice.
