Easy Thai Peanut Noodles
These easy peanut noodles are bursting with flavor and easy to whip up in 30 minutes or less! This delicious sauce will have you licking the bowl!

Ingredients

chicken thighs
cubed

spaghetti

carrots
shredded

crowns
broccoli
chopped

garlic
diced

green onion

Peanut Sauce Ingredients
1
cup
peanut butter
1/2
cup
coconut milk
1/4
cup
soy sauce
3
tsp
rice vinegar
1
tsp
sesame oil
1
tsp
honey
optional
juice from 1 lime
Instructions
Boil water and prepare noodles according to directions on package.
In medium mixing bowl, combine peanut butter, coconut milk, soy sauce, vinegar, lime juice, and honey, and whisk until smooth.
While pasta is cooking, sauté chicken thighs in large pan until just browned on outside.
Add carrots, broccoli, and garlic to pan with chicken and cook until veggies are tender.
Add noodles and sauce to sauté pan with chicken and veggies. Stir until everything is well coated with sauce.
Top with chopped green onion or your favorite garnish.
