These easy peanut noodles are bursting with flavor and easy to whip up in 30 minutes or less! This delicious creamy sauce will have you licking the bowl!

Easy Peanut Noodles

I think I’ve mentioned before that I’m a big fan of noodles. Peanut noodles are one of my all-time favorites and I’m so excited to share this recipe with you! This is one of the very first recipes we ever made for the blog and I finally decided to take some new photos and add a video. I don’t think the original photos really did it justice because I was a total beginner at food photography back then!

The peanut sauce is the star of the show here — smooth and creamy, sweet and tangy, with that perfectly crave-able umami flavor that makes you want to keep coming back for more.

The noodles and veggies soak up all of that amazing sauce so that every single bite is wow-worthy. The kids LOVE it, I love it, everyone loves it! And the best part…it’s an easy dish that you can put together in about 30 minutes!

The recipe might look a bit complicated because of the lengthy ingredient list, but don’t be intimidated! Most of these ingredients are pantry staples or things you may already have on hand at home. So let’s get started!

Ingredients

  • 1lb chicken thighs, cubed
  • 1 package spaghetti, or similar shaped rice noodles
  • 1 cup shredded carrots
  • 2 broccoli crowns, chopped
  • 6 cloves of garlic, diced

For the Sauce:

  • 1 cup peanut butter
  • 1/2 cup coconut milk
  • 1/4 cup soy sauce
  • 3 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp honey (optional)
  • juice from 1 lime

Garnish Ideas

  • Chopped green onions
  • Fresh cilantro
  • Sesame seeds
  • Crushed peanuts
  • Lime wedge

Instructions

To Prep:

  • Boil a large pot of water and prepare noodles according to package instructions. Drain and set aside.
  • While pasta is cooking, sauté chicken thighs in large pan until just browned on outside.

How to Make Peanut Noodles:

  1. Add carrots, broccoli, and garlic to the pan with chicken and cook until vegetables are tender.
  2. In medium mixing bowl, whisk together peanut butter, coconut milk, soy sauce, vinegar, lime juice, and honey until smooth.
  3. Add noodles and peanut sauce to sauté pan with chicken and veggies.
  4. Stir until everything is well coated with sauce and warmed throughout. Top with your favorite garnishes, such as chopped green onion.

That’s it — really! This is such a great dish for any occasion, whether it’s company visiting or just Tuesday night. Peanut noodles are healthy AND filling, the perfect comfort food. I can eat almost a whole pan myself! And I do sometimes! Just kidding…sort of 😉

Prep Tips

  • This is an easy recipe to customize using mix-ins and garnishes. We usually top our peanut noodles with fresh herbs (cilantro and green onion are my favorites) and peanuts. However, you could also try Thai basil, red pepper flakes (to make it spicy!), a squeeze of lime juice, etc.
  • For a sweeter sauce, try using 1-2 Tablespoons honey instead of a teaspoon.
  • Want a little extra kick? Mix a 1/2 teaspoon of chili oil into the sauce!
  • To make this a vegetarian recipe, simply skip the chicken!

Frequently Asked Questions

What Type Of Pasta Should I Use?

There are a few options that work well in this dish. To keep it simple, you can use regular spaghetti. We’ve also tried this recipe with brown rice vermicelli noodles and loved it! Just make sure to use the thicker vermicelli that is similar in size to spaghetti. You could even make this dish with ramen noodles!

If you’d like to make this dish gluten-free, you can use your favorite gluten free noodles. Again, brown rice vermicelli is a great option and one that I’ve personally tried.

Can I Use Different Vegetables?

Our kids love broccoli and carrots, so that is what we usually add to our noodles. However, you are welcome to swap these with your favorite veggies! Red or orange bell peppers, red cabbage, and sugar snap peas would all be tasty too!

How Do You Reheat Peanut Noodles?

Store any leftover noodles in an airtight container in the fridge for up to 4-5 days.

When you open them to reheat, you may notice that the noodles appear a bit dry. However, you can easily re-hydrate them!

To do so, whisk together a bit of creamy peanut butter and coconut milk. You don’t need a lot of sauce, just enough to add some moisture back to the noodles. Add this sauce to the pan with your leftover noodles and heat while stirring occasionally. When everything is warmed through, serve and enjoy!
