I think I’ve mentioned before that I’m a big fan of noodles — and peanut noodles are one of my favorite kinds! The recipe might look a bit complicated because of the lengthy ingredient list, but don’t be intimidated! These Peanut Noodles are actually very easy to make and you probably have a lot of these items on hand already. And they are sooooo worth making!
Here’s what you need to make Peanut Noodles:
- 1lb chicken thighs, cubed
- 1 package noodles of your choice (we used brown rice vermicelli)
- 1 cup shredded carrots
- 2 broccoli crowns, chopped
- 6 cloves of garlic, diced
- 1 cup peanut butter
- 1/2 cup coconut milk
- 1/4 cup soy sauce
- 3 tsp rice wine vinegar
- 1 tsp sesame oil
- 1 tsp honey (optional)
- juice from 1 lime
- 1 stalk green onion, chopped
STEP ONE: Boil water and prepare noodles according to directions on package.
STEP TWO: While pasta is cooking, sauté chicken thighs in large pan until just browned on outside.
STEP THREE: Add carrots, broccoli, and garlic to pan with chicken and cook until veggies are tender.
STEP FOUR: In medium mixing bowl, combine peanut butter, coconut milk, soy sauce, vinegar, lime juice, and honey, and whisk until smooth.
STEP FIVE: Add noodles and sauce to sauté pan with chicken and veggies. Stir until everything is well coated with sauce.
That’s it — really! This is such a great dish for any occasion, whether it’s company visiting or just Tuesday night. Peanut noodles are healthy AND filling, the perfect comfort food. I can eat almost a whole pan myself! And I do sometimes! Just kidding…sort of 😉
