Baked Enchilada Pasta
Enchiladas are a staple in Tex-Mex cooking, but you’ve never had enchiladas like these!
We took all of the flavors of delicious cheese enchiladas with red sauce and whipped them up into an easy and satisfying pasta dish that the whole family will love.
This is such a simple recipe! All you have to do is pre-cook the pasta, layer in a casserole dish, and bake. With just a few minutes of prep time and 10 minutes of baking time, this easy Enchilada Pasta recipe is ready in about 30 minutes, or less!
This dish works great as a flavorful side dish, a quick and wholesome weeknight dinner, or even something unique to bring to the next potluck gathering.

Ingredients
- 2 1/2 cups pasta, uncooked (approximately 4 cups cooked)
- 1 Tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, smashed and sliced
- 1 cup corn
- 1 cup black beans
- 1 cup diced tomatoes
- 1 teaspoon taco seasoning
- 1 teaspoon cajun seasoning
- 1 cup red enchilada sauce
- 2 cups shredded cheese

- 8-inch square baking dish (this one comes with a handy lid!)
- Large skillet
- Large pot for cooking the pasta
Instructions
To Prep:
- Preheat the oven to 350°F.
- While the oven preheats, cook the pasta according to package instructions. Drain, but do not rinse.
- Sauté onions in a skillet over medium heat for 2-3 minutes until translucent and soft. Add garlic and cook for one additional minute.
To Make Enchilada Pasta
- Place the cooked pasta in an 8” x 8” casserole dish.
- Add the cooked onions and garlic to the casserole dish and stir to mix with the pasta.. Add the corn, black beans, and tomatoes and stir to combine.
- In a small bowl, whisk the taco seasoning and cajun seasoning into the enchilada sauce. Pour sauce into the pasta and stir until fully coated.
- Top with shredded cheese and bake for 10-15 minutes, until cheese is completely melted.
Prep Tips
- Serve the finished casserole with all of your favorite enchilada toppings: sour cream, extra shredded cheese, black olives, green onions, cilantro, jalapeño peppers, etc.
- Feel free to use your favorite cheese for the topping! Cheddar cheese, Monterey Jack cheese, Mozzarella, or a Mexican style blend would all taste fantastic.
- Add a pinch of salt to the water when boiling your pasta; it helps to enhance the flavor!

What Kind Of Pasta Should I Use?
When we made this dish we used farfalle, or bowtie pasta. It holds up well when baking and keeps its texture. It’s also the perfect bite-size!
Alternatively, you could use rotini pasta, penne, rigatoni, or any similar bite sized pasta shape.
Can You Add Meat?
Sure! We made this a vegetarian dish, so it works well as a side dish. However, you can add your favorite protein to make this a complete and balanced meal.
If using ground beef, you’ll want to pre-cook the beef so that it is almost cooked throughout, then stir into the pasta before you top with cheese and bake.
If using chicken, you’ll also want the chicken to be pre-cooked. Rotisserie chicken works great for this dish!
Can You Use Gluten-Free Pasta?
Absolutely! When choosing a pasta, I recommend going with a brand that you’re familiar with already. Some types of gluten free pasta don’t hold up as well during baking. You may want to cook the pasta al dente before adding to the casserole dish (versus fully soft pasta).
