To Prep: Line a baking sheet with wax paper or a silicone mat. Push a lollipop stick into the bottom of each jumbo marshmallow.
Arrange 4 candy corn in a fan shape with the points down on a wax paper lined tray
Combine 1 cup chocolate chips with 1 Tablespoon coconut oil in a microwave save bowl. Heat in 20-second intervals, stirring in between, until melted and smooth.
Dip a large marshmallow into the melted chocolate and place on top of the candy corn, so that the fat ends of the candy corn are visible, but the points of the candy corn are pressed into the back of the chocolate-coated marshmallow.
While the chocolate is still wet, gently press one candy corn, point side down, on the front. Complete the face by pressing two candy eyeballs into the melted chocolate.
Repeat with all of your marshmallows. Allow to dry until the chocolate has completely hardened and all of the candy corn are securely in place.
