Thanksgiving Turkey Marshmallow Pops

Fall is almost here and I’m already planning our Thanksgiving menu!

Every year we try out a few new desserts and fall recipes. These Turkey Marshmallow Pops are one of my new favorites — don’t the candy corn look just like a colorful fan of feathers?!

These Thanksgiving turkey marshmallows are super cute and they are actually very easy to make. This is a great sweet treat to make with the kids! I would handle the melting, but they can totally help dipping the marshmallows in chocolate and decorating the turkey faces.

Instructions

To Prep: Line a baking sheet with wax paper or a silicone mat. Push a lollipop stick into the bottom of each jumbo marshmallow.

  1. Arrange 4 candy corn in a fan shape with the points down on a wax paper lined tray
  2. Combine 1 cup chocolate chips with 1 Tablespoon coconut oil in a microwave save bowl. Heat in 20-second intervals, stirring in between, until melted and smooth.
  3. Dip a large marshmallow into the melted chocolate and place on top of the candy corn, so that the fat ends of the candy corn are visible, but the points of the candy corn are pressed into the back of the chocolate-coated marshmallow.
  4. While the chocolate is still wet, gently press one candy corn, point side down, on the front. Complete the face by pressing two candy eyeballs into the melted chocolate.

Repeat with all of your marshmallows. Allow to dry until the chocolate has completely hardened and all of the candy corn are securely in place.

Prep Tips

  • Feel free to take our original turkey design and make it your own! You can add festive sprinkles or other fun touches.
  • Instead of using chocolate chips and coconut oil, you can simply use chocolate melting wafers. These chocolate candies are formulated specifically to melt smoothly (which is why we add coconut oil to the chocolate chips).
  • If you don’t have lollipop sticks handy, you can also use thick paper straws as your sticks. Simply cut each straw in half so they’re not too long (and you can use one straw to make two lollipops).

Frequently Asked Questions

Do You Need To Refrigerate Marshmallow Pops?

Nope! I don’t recommend refrigerating marshmallow pops because it will dry out the marshmallows and potentially cause condensation on the outside of the chocolate coating. Keep your decorated marshmallows in an airtight container at room temperature instead.

Do You Have To Use Coconut Oil With The Chocolate Chips?

We added a Tablespoon of coconut oil to our chocolate chips when melting them, to help them melt smoothly and have a slightly shiny look. Sometimes when you melt chocolate chips by themselves, they look a little dry or white-ish on the outside. So yes, you can melt chocolate chips by themselves, but they may not look quite as pretty.

An alternative to coconut oil is vegetable shortening. You can use a Tablespoon of shortening when melting instead of the coconut oil and have the same effect.

Also, as mentioned in the prep tips above, you can use chocolate melting wafers or brown candy melts. Then you don’t need coconut oil or shortening at all!
