These Keto Onion Bombs are literally the BOMB!!

I know, I know…but I couldn’t resist! 😉

Seriously though, it almost seems too good to be true that you can eat something like this and still lose weight. But I’ve known people who’ve had amazing results sticking to the keto diet!

Right now since I’m breastfeeding my youngest daughter, I’m not completely eliminating carbs. However, I still enjoy keto recipes because I feel better when I eat fewer carbs overall.

It’s important to remember that some keto recipes have a ton of fat and calories, which is fine when you’re following the ketogenic diet. However, if you do eat some carbs (like me), you might want to look for keto recipes with fewer calories.

That’s why I love these Keto Onion Bombs! They’re under 300 calories each AND low in carbs…and they’re so satisfying! It’s the best of both worlds!

I also know that keto/low carb diets work because I’ve followed it more strictly in the past and the pounds seemed to melt away!

A few months ago we made a Keto Blooming Onion recipe, inspired by one of my all-time favorite appetizers. It was such a hit that when my friend Jennifer told me about these Keto onion bombs she was making, I practically begged her to let me share them with you!

So enough talking…let’s get cooking!

How to Make Keto Stuffed Onions

  • Non-slip mixing bowls
  • Pyrex baking dish

The first thing we did was to hollow out our onions. The easiest way to do so is to cut off the top and bottom of the onion, cut a criss-cross pattern with your knife in the middle of the onion, then poke out each inner quarter.

How to make Keto stuffed onions

After all onions are peeled and hollowed-out, place them in a casserole dish. You could also use a baking sheet, as long as it has a lip to prevent the onions from sliding off when you take them in and out of the oven.

Mix the rest of your ingredients (except for the cheese) by hand. The egg is an optional binder — I prefer to use an egg, however, the onion will keep the beef intact if you don’t have any eggs on hand.

Fill you onions about halfway with the beef mixture, pressing to make a bowl shape in the middle where you can place the cheese cubes.

Top the onions with the rest of your beef mixture, then bake.

Our Keto onion bombs were cooked for 45 minutes — just about medium well with perfectly melted cheese in the middle.

Keto Stuffed Onion Bombs

Ingredients

  • 4 onions (medium-sized)
  • 1/2 lb ground beef or mixture of beef and pork
  • 1 egg
  • Italian seasoning to taste
  • 1/4 cup pork rinds ground
  • 2 Tablespoons Parmesan cheese
  • Worcestershire sauce to taste
  • 2 ounces cheddar cheese quartered

Instructions

  • Preheat oven to 350°F.
  • Cut the ends off each end of the onion, peel, and then remove the inner layers. Your onion should be a bottomless, hollow shell, about 1/2" thick.
  • After all onions are peeled and hollowed-out, place them in a casserole dish.
  • In a medium-sized mixing bowl, combine the ground beef, egg, Italian seasoning, pork rinds, Parmesan cheese and Worcestershire sauce.
  • Press about one tablespoon of the meat mixture into each onion (the exact amount you use will depend on the size of your onions).
  • Press down with your fingers to compact the meat, making an indentation in the middle of your meet where you can insert a cube of cheese.
  • Fill your onions to the top with more meat mixture, to cover the cheese.
  • Bake for 35-45 minutes.
