If you haven’t tried Greek Souvlaki before, you’re in for a real treat! This easy Greek-inspired recipe allows you to make the classic dish at home in less than an hour!

It’s a quick, healthy meal that’s perfect for summer grilling season!

What Does Souvlaki Mean?

In Greek, the word “souvlaki” means “small skewer.” When it comes to food, souvlaki refers to marinated meat — usually chicken, pork, beef, or lamb.

Our souvlaki pork is marinated in a simple blend of olive oil, lemon, and spices. Though this marinade contains just a handful of ingredients, it is incredibly flavorful and allows the pork to really shine!

Ingredients

For your convenience, I’ve included shop-able ad links to some of the products used to make this recipe; disclosure policy available here.

  • 1 lb pork tenderloin, cut into 1-2 inch cubes
  • 1 onion, cut into large sections — You can use sweet yellow onions or red onions
  • 2 bell peppers, cut into 1/2 inch strips, then in half again — We used sweet red and yellow peppers
  • 2 tomatoes, de-seeded and chopped — You could also use whole cherry tomatoes or larges grape tomatoes.

For the Marinade:

  • 1 teaspoons oregano (divided)
  • 2 teaspoons minced garlic cloves
  • 2 Tablespoons lemon juice
  • 2 Tablespoons extra-virgin olive oil (divided)
  • Salt and black pepper, to taste

Kitchen Tools Used

  • Wooden Skewers
  • Non-slip mixing bowls

Instructions

While you prepare your meat and vegetables, soak the wooden skewers in a bowl of water for 30 minutes. This will coincide perfectly with the marinating time for the pork.

  1. Place pork chunks in a large zip-top freezer bag. Whisk together the marinade ingredients in a small bowl.
  2. Pour marinade into the bag and seal the top. Place in the refrigerator for at least 30 minutes. Make sure all of the pork cubes are covered with the marinade (give the bag a shake halfway through if needed). While the pork marinades, add the cut veggies to a large bowl and toss to coat in oil, oregano, salt & pepper.
  3. Once pork has finished marinating, preheat the grill to 350°F (or medium heat) and, if needed, spray the grill or coat with oil to prevent sticking. Prepare your skewers using 4-5 pieces of pork on each skewer, alternating each piece of meat with a vegetable.
  4. Place the skewers on the grill and cook for 10 – 12 minutes, rotating halfway through, or until the pork is cooked through and the vegetables are tender. If you have a food thermometer, your pork should register at least 145°F at the center.

Remove from the grill and allow to rest for a couple minutes before serving. If making a pita sandwich, remove pork and vegetables from the skewer.

If plating with rice, feel free to leave on the skewer, as it makes for a beautiful presentation!

Frequently Asked Questions

What Do You Serve Souvlaki With?

Souvlaki is traditionally a street food, so it is commonly served as a sandwich on pita bread with tzatziki sauce — the perfect handheld meal! However, it also pairs fabulously with a bed of steamed rice or a Greek salad.

Can You Marinate the Pork Overnight?

Absolutely! This is a great recipe to prepare ahead of time.

Just be sure that when it’s time to skewer and grill the pork that you soak the wooden skewers in water for 30-45 minutes.

However, there is such a thing as marinating for too long — you don’t want to soak the meat in marinade for more than 24 hours.

Can I Use a Different Type of Meat?

If you want to add variety to your meal, you can swap out the pork or cook separate skewers with different kinds of protein. Because different meats will have different cook times, you’ll want to make sure that each individual skewer only has one kind of meat on it.

  • Chicken — 165°F internal temperature (or about 6 minutes on each side)
  • Steak — 145°F internal temperature (or about 5 minutes on each side)
  • Lamb — 145°F internal temperature (or about 4-5 minutes on each side)

For both steak and lamb, I prefer my meat medium-rare. If you like yours more well done, add another minute or two of grilling time.

Ingredients

  • 1 lb pork cubed
  • 1 Onion cut into large sections

Instructions

  • Soak wooden skewers in water for 30-45 minutes.
  • Place pork cubes in a large plastic zip-top bag.
  • Whisk together the marinade together (1/2 teaspoon oregano, garlic, lemon juice, 1 T oil, salt, and pepper) and add to the bag of pork. Refrigerate for at least 30 minutes, making sure all the pork is coated.
  • Add prepped vegetables to a large bowl with the remaining oil and oregano, and a pinch of salt and pepper. Toss to coat the vegetables.
  • Preheat grill to 350°F or medium heat. Spray to coat or rub oil on the grill with an old kitchen towel (before the grill is hot).
  • Add pork and vegetables to skewers, alternating meat and veggies. Use 4-5 pieces of meat on each.
  • Spray the grill or wipe with oil and a kitchen towel if you feel it's necessary.
  • Place the skewers on the grill and cook for 10 – 12 minutes, rotating halfway through, until the pork is cooked through and the vegetables are tender. Pork should have an internal temperature of at least 145°F.
