2Boneless Skinless Chicken Breasts
Salt and Black Pepperto taste

2-4Cherry Tomatoeshalved

1/2teaspoonRed Pepper Flakesor Chili Flakes
1cupChicken Brothor vegetable broth
1/2cupHeavy Creamor Double Cream

Instructions
Preheat oven to 375°F. Season chicken with salt and pepper and allow to rest for about 10 minutes.
Heat a medium skillet with 1-2 Tablespoons olive oil. Cook the chicken for about 5 minutes on each side, then transfer the chicken to an oven-safe dish.
Add chopped garlic and thyme to the hot skillet and cook for 1 minute. Add the two types of tomatoes to the pan.
Add the broth, cheese, and pepper flakes to the pan. Bring this mixture to a boil, stirring occasionally.
Pour the creamy sauce into the baking dish with the chicken. Bake uncovered at 375°F for 15 minutes.
