Remove the baby back rib meat from the bones and tear into small, bite-sized pieces. (Tip: You can make this part even easier by heating ribs in the oven for meat that falls right off the bone. Simply follow the heating instructions on the back of the Curly's BBQ ribs package.)
Place rib meat in the center of tortilla and roll tortilla up so the meat is tucked safely in the middle. Insert a toothpick to hold tortilla together during cooking. (Tip: Steam tortillas in microwave for about 10 seconds to soften. This will prevent them from tearing while you roll your flautas.)
Fill a large dutch oven or frying pan with enough cooking oil to almost cover your flautas (about 1-2 inches) and allow to come to frying temperature over medium heat.
When oil is ready, place about 3-4 taquitos in the pan, leaving space between each one. Cook for 3-5 minutes on each side. Remove from pan and place on a paper towel-lined plate to dry.
Repeat until all taquitos are cooked. Remove toothpicks before serving.
For the Avocado Crema
Blend until smooth. Keep refrigerated until ready to use.
