In a medium bowl, stir together the warm water, molasses, honey, and yeast. Set aside and allow the yeast to proof for 10 minutes.
In a separate large bowl, whisk together the flours, cocoa powder, and brown sugar. Create a well in the middle of the dry ingredients and pour the bowl of wet ingredients into this.
Fold together until a sticky dough forms, then transfer to a floured workspace to finish kneading by hand. Continue kneading for 5-8 minutes until you have a smooth ball of dough.
Place the dough into a bowl that's been coated in oil and roll the dough in the oil to coat. Place the dough in the middle of the bowl and cover the bowl with plastic wrap. Allow the dough to rise at room temperature for 2 hours.
To Bake The Bread
Remove the dough from the bowl and divide into 3 even portions.
Roll out each dough ball into a log shape. Place the 3 bread loaves onto the prepared pan.
Brush the top of each loaf with water and sprinkle with rolled oats. Cover and allow to rest for 30 minutes.
Remove the plastic wrap and place the pan into a preheated oven. Bake at 350°F for 30 minutes. Remove from the oven and allow to cool for 10 minutes before serving.
