To Prep: Preheat the oven to 215 degrees Fahrenheit and line a 9x13 baking sheet with aluminum foil. Place a sheet of parchment paper over the top of the foil.
Add the yogurt, cornstarch, and sugar to a small mixing bowl, mixing until fully combined.
Add the egg whites and cream of tartar to a separate medium mixing bowl. Use an electric hand mixer to beat the egg mixture until it thickens and holds its shape.
Gently fold the yogurt mixture into the egg whites using a silicone spatula. Work carefully so the mixture retains its light and fluffy texture.
Using a spoon or piping bag, make small dollops of the yogurt mixture on the prepared pan.
Bake for 30-40 minutes or until lightly golden brown on the bottom.
Remove from oven and allow to cool on the pan for 15 minutes before eating or storing.

Yield: Makes about 150 bite-sized yogurt melts.
Storage: Store in an airtight container at room temperature for up to 2 weeks. Refrigerating or freezing is not recommended, as the melts may become sticky.
Yogurt: Any brand or flavor of yogurt will work, including non-dairy varieties. Remove any large fruit pieces so the melts can dry completely.
Piping: Use a small frosting tip for easier portioning, or a plastic baggie with a small hole cut in the corner.
