What is Mace Spice? Mace is derived from the outer coating of nutmeg seed. What you'd normally think of as "nutmeg" spice is made from the ground seed, whereas mace is made from the ground up seed covering. If you don't have mace at home, you can simply use nutmeg instead — two teaspoons of nutmeg total. Or you can omit the mace altogether.
What Can I Use Instead of Cloves? Cloves seem to be one of those love-it-or-hate-it spices (my husband is not a huge fan). If you don't have ground cloves in your pantry or don't care for the flavor, you can swap with 1 1/2 teaspoons ground cardamom instead.
