Whisk together the muffin mix, milk, and egg in a large bowl, until well combined. Allow this mixture to rest for a few minutes while you heat up the pan.
Heat your skillet over medium-high heat. Once hot, coat with butter or non-stick cooking spray.
Scoop 1/4 cup batter into the hot pan. Cook until bubble appear on top of the entire surface of the pancake (about 2 minutes).
Flip the pancake and cook until the bottom is also golden brown (another 2 minutes). Remove pancake from the pan and move to a separate plate to keep warm.
