How to Make Muffins with Pancake Mix

Breakfast is my favorite meal of the day! No matter what time I have to get up in the morning, I make time to eat something.

My kids love breakfast too and if they could eat one thing every single day it would be chocolate chip pancakes. With these muffin mix pancakes, making fluffy and flavorful breakfast is both easy and fun!

With this awesome shortcut, you can make delicious pancakes in minutes! With muffin mix, the mix-ins are already in the package! You don’t need to add any fruit or chocolate chips or measure out the dry mix. It really doesn’t get any easier than that!

Instead of pancake mix, you’ll use one packet of muffin mix for each batch of pancakes.

The cool part about this recipe is that you can make so many different flavors! If there is a muffin mix for it, you can make pancakes with it! Apple, blueberry, chocolate chip…you name it!

Ingredients

  • 1 Package Dry Muffin Mix (6-7oz package)
  • 1/2 Cup of Milk
  • 1 Large Egg

  • Flat Griddle PanĀ (we have two of these and use them every single day!)
  • Non-Stick Cooking Spray
  • Mixing Bowl

Instructions

  1. Whisk together the muffin mix, milk, and egg in a large bowl, until well combined. A few lumps are ok, but you don’t want any large lumps of dry mix. Allow this mixture to rest for a few minutes while you heat up the pan.
  2. Heat your skillet over medium-high heat. Once hot, coat with butter or non-stick cooking spray.
  3. Scoop 1/4 cup batter into the hot griddle. Cook until bubbles appear on top of the entire surface of the pancake (about 2 minutes).
  4. Flip the pancake with a large spatula and cook until the bottom is also golden brown (another 2 minutes). Remove pancake from the pan and move to a separate plate to keep warm.

Repeat until remaining batter is used. Makes 5-6 medium sized pancakes.

Prep Tips

  • To test if you pan is ready, flick a couple drops of water onto the surface. If they fizzle and sizzle, it’s ready. If they evaporate in a poof instantly, it might be too hot. Reduce to medium heat.
  • The Flat Griddle PanĀ is our favorite tool for pancake making, but any large skillet will do. Use your favorite pan!
  • I always top my pancakes with a pat of butter and maple syrup, but you can have fun with it depending on which flavor of muffin mix you use. Fresh blueberries with your blueberry muffin mix pancakes. Cinnamon apples with apple muffin mix pancakes. You get the idea!
  • You can use any type of milk for this recipe, including plant based milks.

Frequently Asked Questions

Can You Make Waffles With Muffin Mix?

Sure! We often use pancake batter to make waffles, so it makes sense that this muffin mix pancakes recipe would also work for waffles.

To make waffles, mix the ingredients according to the recipe above and add a scoop to your waffle maker. Use the same amount of batter that you normally would. Cook until golden brown and done in the middle.

Take care when removing the waffles from the waffle cooker, as these waffles will have the texture and consistency of a muffin. They are a little bit softer than regular waffles.

Can You Save Some Of The Batter For Later?

Yes, you can save any unused batter for another day. Scoop the batter into an airtight container and keep refrigerated. Use within 2-3 days. Some separation of the batter is normal — just give it a quick stir before cooking. Always check for signs of mold just in case! It’s easy to whip up another batch if needed.

How Do You Store Leftover Pancakes?

If there are any leftovers, place the pancakes into a freezer bag or food storage container and refrigerate. They’ll last for a few days in the fridge. To reheat, you can microwave (like you would with frozen pancakes, but for shorter time) or heat in the toaster oven.
