Strawberry Chocolate Brownies
If you love chocolate covered strawberries then you’ve GOT to try this recipe! These strawberry fudge brownies taste just like the classic Valentine’s candy…only better!
We started with a base of rich fudge brownies, topped them with a layer of fresh juicy strawberries, and covered them an easy chocolate ganache. Everything comes together in a creamy chocolate treat with moist crumbs and bursts of strawberry flavor. This truly is a melt-in-your-mouth masterpiece for all my fellow chocolate lovers!

Chocolate and strawberries are the perfect pairing, especially when you use semisweet or dark chocolate to balance the sweetness of the strawberries.

Ingredients

- 1 box brownie mix, plus ingredients listed on package (usually eggs, oil, and water)
- 1 lb strawberries, de-stemmed and cut in half
Chocolate Ganache
- 3 cups semi-sweet chocolate chips
- 1 1/2 cups heavy whipping cream
Kitchen Supplies Used
- 8-inch square baking dish
- Large bowl for mixing brownie batter
- Microwave-safe bowl for making ganache
Instructions
To Prep: Preheat oven to 350°F (or temperature listed in box directions) and coat an 8-inch square baking pan with non-stick cooking spray.
- Prepare brownie mixture, pour batter into the prepared pan, and bake according to package directions. (Or until a toothpick inserted in the middle comes out clean). When brownies are done baking, remove pan from oven and allow to cool to room temperature.
- Add chocolate chips and heavy cream to a microwave-safe bowl. Heat in 30 second intervals, stirring between, until the chocolate melts and the mixture is smooth.
- Place strawberry slices on top of the brownies, with the cut side facing down. Drizzle the chocolate ganache on top of the strawberries and use a spatula to smooth in an even layer and get rid of any air bubbles.
- Refrigerate 20-30 minutes, or until ganache is set, before you cut and serve.
Prep Tips
- Brownies – You can use any kind of standard size brownie mix that you prefer. You can also use homemade! (See FAQ section below).
- Chocolate Chips – We used semisweet chocolate chips, but you could alternatively use milk chocolate chips or dark chocolate chips to make your ganache layer.

Do Strawberry Brownies Need to be Refrigerated?
Normally, I don’t keep brownies in the fridge. However, since there are fresh strawberries on top, I do recommend keeping these brownies refrigerated to keep the fruit looking nicer longer.
Keep any leftovers in an airtight container in the refrigerator. They should stay good for 3-5 days.

Equipment

Ingredients
Brownie Ingredients:
- 1 box Brownie Mix plus ingredients listed on package directions

- 1 1/2 cups heavy whipping cream

- Preheat oven to 350°F and mix up the brownie batter according to package instructions. Coat your baking pan with non-stick spray.
- Pour batter into a 8x8 inch baking pan and bake according to package instructions, or until a toothpick inserted into the middle comes out clean.
- Remove from oven and allow to cool before frosting.
- Place sliced strawberries on top of brownies, cut side facing down.
- Combine chocolate chips and heavy cream in a microwave safe bowl and heat in 30 second increments, stirring until melted and smooth.
- Pour ganache on top of brownies, spreading with spatula to make an even layer.
- Chill brownies in fridge for 20-30 minutes until ganache sets.
