To Prep: Preheat oven to 350ยฐF (or temperature listed in box directions) and coat an 8-inch square baking pan with non-stick cooking spray.

  1. Prepare brownie mixture, pour batter into the prepared pan, and bake according to package directions. (Or until a toothpick inserted in the middle comes out clean). When brownies are done baking, removeย pan from oven and allow to cool to room temperature.
  2. Add chocolate chips and heavy cream to a microwave-safe bowl. Heat in 30 second intervals, stirring between, until the chocolate melts and the mixture is smooth.
  3. Place strawberry slices on top of the brownies, with the cut side facing down. Drizzle the chocolate ganache on top of the strawberries and use a spatula to smooth in an even layer and get rid of any air bubbles.
  4. Refrigerate 20-30 minutes, or until ganache is set, before you cut and serve.

Of course! We used a box brownie mix here to save a bit of time, though we did make the chocolate ganache.

Do Strawberry Brownies Need to be Refrigerated?

Normally, I don’t keep brownies in the fridge. However, since there are fresh strawberries on top, I do recommend keeping these brownies refrigerated to keep the fruit looking nicer longer.

Keep any leftovers in an airtight container in the refrigerator. They should stay good for 3-5 days.

  1. Hi Stacey,

What a great recipe! Although I love chocolates and strawberries separately, I have never really enjoyed them together. But my sister is my exact opposite, and she loves chocolate and strawberry. Since itโ€™s her birthday next month, I was thinking about doing something personal, and these brownies will be the perfect handmade gift for her. I am sure she will love it. Thanks a lot for sharing this recipe. I really hope I can make these brownies half as good as yours.
