A dessert burrito?!

Yes…it is a thing!

If you are looking for a quick and easy dessert that is sure to wow ’em, you can’t go wrong with these delicious strawberry chimichangas!

Soft flour tortillas are coated with a creamy cheesecake filling, pocketed with fresh sweet strawberries, rolled up, air fried until warm and golden brown, and dusted with cinnamon sugar. While this spectacular sweet treat looks fancy, it is ready in minutes!

Crisp, warm, sweet, and fruity, these Air Fryer Strawberry Chimichangas are hard to beat when it comes to air fryer desserts! Or any dessert for that matter!

What is a Chimichanga?

A chimichanga is essentially a deep-fried burrito, popular in Tex-Mex restaurants. It’s usually a savory dish, filled with meat, beans, rice and cheese. Instead of eating it with your hands like you would a burrito, a chimichanga is often served on a large plate and topped with extra goodies, like cheese sauce or salsa.

But you know what?

Chimichangas are just as fabulous when made into a sweet recipe too!

I mean, deep fried cheesecake? Does it get any more decadent than that?!

However, because we used our air fryer, this actually *isn’t* a truly deep-fried dessert! You get all of the flavor of a fried dessert, without all the grease and mess!

Another benefit to using the air fryer is that it is more energy efficient than a conventional oven. It also doesn’t heat up the whole kitchen while you’re cooking.

And it is FAST!

This awesome air fryer dessert is ready in 20 minutes or less! Can’t beat that!

Ingredients

  • 6 Flour Tortillas (Burrito Size)
  • 8 oz Cream Cheese Spread
  • 1 Tablespoon Vanilla Extract
  • 1 Cup Fresh Strawberries, sliced
  • 1/2 Cup Greek Yogurt (or Sour Cream)
  • 1 Cup Sugar + Cinnamon
  • 1/2 Cup Melted Butter

Instructions

To Prep: Pre-heat air fryer to 350 degrees and coat the air fryer basket with non-stick cooking spray.

  1. In a large bowl, whisk together the cream cheese spread, vanilla extract, 1 Tablespoon of sugar & Greek yogurt. Fold in the sliced strawberries with a spatula or wooden spoon, scraping the sides of the bowl to make sure everything is incorporated.
  2. Portion out the strawberry cheesecake filling evenly among the 6 tortillas and place a large scoop in the middle of each.
  3. Fold in the sides of each tortilla. While holding the sides in place, roll up the tortillas like a burrito, starting at the bottom and working up to the top. Use toothpicks to secure, if needed. Repeat the rolling process with the remaining tortillas, brush them with melted butter, and place in the air fryer basket. Air fry for 5 minutes or until the tortillas have turned golden brown.
  4. Brush the tops with melted butter and sprinkle with cinnamon sugar or brown sugar. You can also roll the chimichangas directly in a shallow bowl filled with the cinnamon-sugar mixture, to get more of the coating.

Remove the toothpicks before serving.

Topping Ideas

We kept it simple for this recipe post, but if you’re making this dessert for a special occasion you can totally jazz it up! Here are some of our favorite ideas:

  • Drizzle with chocolate syrup
  • Add a dollop of Cool Whip or whipped cream
  • Top with extra sliced strawberries
  • Swap out the cinnamon sugar for brown sugar sprinkle

Frequently Asked Questions

How Many Chimichangas Can You Cook at One Time?

This recipe yields 6 chimichangas, when using standard burrito-sized tortillas. Our air fryer pan fit 4 rolled-up chimichangas at once, so we were able to make this in only two batches. Depending on the size of your air fryer, you may be able to cook more or less per batch.

When cooking, it is important that there is a little bit of space between each chimichanga, as air circulation is needed for your air fryer to work properly. Do not stack or overlap when cooking.

Can You Use Frozen Strawberries?

Fresh strawberries work best, but in a pinch, you can use frozen strawberries. I recommend thawing the fruit completely first. You’ll also want to drain or pat dry any excess moisture after thawing.

Can You Bake These Chimichangas in the Oven?

We used an air fryer because it’s fast and it doesn’t heat up the kitchen. However, if you don’t have an air fryer, you can still make this recipe!

To bake, place the chimichangas on a greased baking sheet, seam side down. Bake at 350°F for about 15 minutes, or until golden brown on the outside.

Can You Use a Different Type of Fruit?

Absolutely! You can swap the strawberries out with your favorite fruit. Blueberries or peaches would also work perfectly! Just think about the different types of fruit flavored cheesecakes out there and you can do the same with this dessert!
