Disney Copycat Chocolate Peanut Butter Sandwiches

Copycat Disneyland Chocolate Peanut Butter Sandwiches
Chocolate and peanut butter is the best flavor combination in the world, in my humble opinion. These chocolate peanut butter sandwich cookies perfectly capture that magical combination in a delicious handheld bite!
Here’s the scoop:
These simple but decadent candy treats feature a crunchy graham cracker layer at the base.
Then, those graham crackers are coated in rich creamy chocolate.
A peanut butter layer is added on top of that. Smooth, salty, sweet peanut butter….mmmm…
And finally, another layer of chocolate!
Every single bite is filled with all three flavors: chocolate, peanut butter, and graham. Crunchy, creamy, sweet, salty…I am drooling just thinking about it!
Now, I can’t claim that I invented this genius recipe…nope, credit for that goes to Disneyland! But since I don’t live close to Disneyland and don’t get to visit nearly as often as I’d like, I’ve created this spot-on copycat recipe!

Where to Find Chocolate Peanut Butter Sandwich Bars at Disneyland
The first time I ever visited Disneyland, I was an adult. My expectation for amusement park food was low.
So boy was I surprised to find out just how GOOD the food at Disneyland is!! Nearly everything I tried was wow-worthy…you could really tell how much thought they put into every single recipe. I also loved all the food themes: for different areas of the park, holidays, etc.
These Chocolate Peanut Butter Sandwich Cookies are just like the ones found in Pooh’s Corner Bakery! If you’ve tried them, then you know why I’m wanting to make them at home!
Pooh’s Corner Bakery is located in the very back corner of Critter Country in Disneyland. It is worth the walk, as not only do they offer amazing sweet treats, but you can watch the master candy makers at work too! So much fun to see how all your favorite candies and desserts are made!
Ingredients
I’ve included ad links for your convenience in re-creating this recipe; disclosure policy available here.
- Graham Cracker Sheets — We used 6 full sheets, divided in half, to make 12 total sandwich cookies.
- Milk Chocolate Chips — About 3 cups should be plenty for this recipe, but there isn’t an exact amount required.
- Shortening — To help the chocolate melt smoother. You can also use milk chocolate melting wafers instead of the chocolate chip/shortening combo.
- Creamy Peanut Butter — Avoid using natural peanut butter, where the oils often separate from the peanut butter.
- Powdered Sugar
- Vanilla Extract
- Milk — Any kind!
Kitchen Supplies Used
- Cookie sheet or baking sheets
- Parchment Paper, wax paper, or Non-stick silicone baking mat
- Microwave-safe bowls
- Small cookie scoop — this handy gadget helps create more uniform sizes for peanut butter balls
Directions
Line a cookie sheet with a silicone baking mat or parchment paper.
Microwave half of the chocolate chips along with 1 teaspoon of shortening in microwave-safe bowl. Heat in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
Dip each graham cracker square into the melted chocolate, gently tapping it to allow the excess chocolate to drip back into the bowl. When the graham cracker is completely covered in chocolate, place on your lined baking sheet. Repeat with all crackers.
Place the baking sheet of chocolate covered graham crackers in the fridge or freezer to harden.
Meanwhile, make the peanut butter filling by mixing the peanut butter, powdered sugar, milk and vanilla. If it starts to get thick, you can finish mixing/kneading by hand.
Roll into 12 equal peanut butter dough balls and chill for about 15 minutes in the freezer.
Take the cold chocolate covered graham crackers and peanut butter dough balls out of the fridge or freezer. Flatten the peanut butter balls to fit and cover the top of each graham cracker.
Melt the other half of the chocolate chips. Spoon the melted chocolate over the peanut butter layer and spread around making sure to cover the top and sides. Use plenty of chocolate so that the peanut butter is completely covered.
Chill in fridge until fully set.
If you like, you can drizzle extra chocolate on top to make them look pretty.
How to Store
While refrigeration is not required, it does help keep the chocolate from softening too much or melting. They do taste delicious chilled!
If the graham crackers are fully covered and you keep these in an airtight container in the refrigerator, they can stay good for up to a month.

Chocolate Peanut Butter Sandwiches (Disneyland Copycat)
Ingredients
- 6 graham cracker sheets divided in half
- 3 cups milk chocolate chips
- 2 teaspoons shortening
- 1 cup peanut butter creamy
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 1/2 teaspoons milk
Instructions
- Line a cookie sheet with a silicone baking mat or parchment paper.
- Melt 1 1/2 cups of chocolate chips and 1 teaspoon of shortening in a microwave-safe bowl. Heat in 30-second intervals , stirring in between, until the chocolate is fully melted and smooth.
- Dip each graham cracker half into the chocolate, gently tapping it to shake off the excess chocolate, until fully coated.
- Place the chocolate covered graham cracker on the lined cookie sheet. Repeat until all crackers are coated, then place in fridge or freezer until chocolate hardens.
- Mix together peanut butter, powdered sugar, milk, and vanilla, until smooth. You can use your (clean) hands to mix when this starts to get thick.
- Roll peanut butter mixture into into 12 equal peanut butter dough balls and chill for about 15 minutes in the freezer.
- Take out the cold chocolate covered graham crackers and peanut butter dough balls. Place one peanut butter ball on top of each graham and press to spread the peanut butter until it fully covers each cracker.
- Make another batch of melted chocolate, then spoon it over top of the peanut butter layer. Use enough so that it covers the top and sides completely, to seal the peanut butter inside.
- Place crackers back in the fridge or freezer to set (about 15 – 20 minutes).
- Drizzle leftover chocolate over the top for decoration, if desired.
