Moist and dense, tangy and sweet, these Strawberry Lemon Bars are a real fruit treat that’s perfect for summertime!

Strawberry Lemon Blondies

All the flavor of summer in one delicious bite!

Imagine a luscious shortbread bar, filled with juicy chunks of sweet strawberries and topped with a tart strawberry lemonade glaze. The fresh strawberries and tangy lemon combine to make a sweet and refreshing treat!

I love these strawberry lemon dessert bars because they are made with real fruit: fresh strawberries and lemon juice. It makes the flavors pop without being overly sweet.

Usually I’m ALL about chocolate desserts, but this is one case where I’ll make an exception. They are THAT good!!

Strawberry Lemon Bar Ingredients

  • Butter — unsalted, softened
  • Sugar — white granulated sugar
  • Eggs
  • Lemon juice — we used fresh squeeze (strained to remove seeds)
  • Flour — all purpose
  • Baking powder
  • Salt
  • Fresh strawberries — diced

For the Glaze:

  • Powdered Sugar
  • Diced strawberries
  • Lemon juice

Kitchen Tools Used

  • 9×13″ glass baking dish
  • Electric mixer
  • Non-slip mixing bowls

How to Make Strawberry Lemon Bars

  1. First, preheat your oven to 350°F and line a 9×13 baking dish with parchment paper.
  2. With an electric mixer or stand mixer, beat the butter and sugar until creamy and fluffy.
  3. Add the egg and beat until combined. Mix in the lemon juice.
  4. Using a separate bowl whisk together the flour, baking powder, and salt.
  5. Slowly add the dry mixture to the bowl wet ingredients, mixing as you go.
  6. Fold in the diced strawberries by hand with a spatula.
  7. Scoop the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, until a toothpick inserted in the middle comes out clean.

To Make the Strawberry Lemonade Glaze

  1. Whisk together the powdered sugar and the lemon juice until smooth.
  2. Stir in the strawberries.
  3. Smooth on top of bars (uncut and in pan) and allow the glaze to harden.

Jazz ’em up!

Here are a few ideas to make your strawberry lemon dessert bars extra!

  • Add a sprinkle of lemon zest on top for a little extra tartness.
  • Mix in a handful of white chocolate chips before baking for extra creaminess.
  • Drizzle strawberry syrup on top and serve with a dollop of whipped cream for extra sweetness.

Ingredients

  • 2 cups unsalted butter softened
  • 1 ½ cups sugar
  • 2 large eggs
  • ½ cup lemon juice
  • 4 ½ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups strawberries diced

For the Glaze:

  • 2 cups powdered sugar
  • ½ cups strawberries diced
  • 1 Tablespoon lemon juice

Instructions

  • Preheat oven to 350°F and line a 9x13 baking dish with parchment paper.
  • Beat butter and sugar until creamy.
  • Add the egg and beat until just combined, then add in the lemon juice.
  • Using a separate mixing bowl whisk together the flour, baking powder, and salt.
  • Slowly pour dry mixture into bowl of wet ingredients, mixing as you pour, until batter is well incorporated.
  • Fold in diced strawberries with spatula.
  • Scoop the batter into baking dish and spread to distribute evenly.
  • Bake for 30-35 minutes.
  • Remove from oven and allow to cool while you prepare the glaze.

For the Strawberry Lemon Glaze:

  • Whisk together the powdered sugar and the lemon juice until smooth.
  • Stir in strawberries.
  • Pour on top of blondies (in pan) and smooth with spatula. Allow glaze to harden before cutting and serving.
