Strawberry Shortcake Bellini

Brunch is definitely a thing here in Houston, Texas. In fact, during my college days, many an afternoon was spent unwinding with friends over comfort food and light and fizzy champagne cocktails.

While mimosas might be the brunch go-to, I actually enjoyed bellinis just as much (maybe more) because orange juice is a bit on the tart side. A bellini seemed just a tad more sophisticated, and I think it just tasted plain delicious!

What is a Bellini?

A bellini is an Italian cocktail traditionally made with Prosecco sparkling wine and peach juice or puree.

However, these days you’ll often see the name more liberally used to describe any combination of sparking wine and fruit juice/puree, like champagne and mango.

My favorite unique Bellini variety is the Strawberry Bellini. (Also known as a Rossini if you want to be super technical about it).

For this recipe we went even one step further to make a Strawberry Shortcake Bellini — it tastes just like the classic summer dessert!

Instead of plain old Prosecco, we used sparking Rosé wine to give it a distinctly pink hue. Super festive!

Strawberry Shortcake Bellini Ingredients

  • Rosé sparkling wine (I get my wines through Winc wine club)
  • Birthday cake vodka (or vanilla vodka)
  • Fresh strawberries, sliced
  • Strawberry puree, optional
  • Ice, as needed

How to Make a Pitcher of Strawberry Bellinis

Combine vodka and sparkling Rosé in a large pitcher with ice. Take care pouring the rose to prevent it from foaming up over the top of the pitcher.

TIP: If you want your Strawberry Shortcake Bellinis to be a little sweeter, feel free to add 1/4 cup strawberry puree too.

Add sliced strawberries to pitcher and stir to chill.

Pour into champagne flutes and garnish with a slice or two of fresh strawberries.

TIP: To prevent watering down, you can use frozen strawberries in place of ice to chill your Bellini pitcher. We use frozen fruit to chill our famous Tropical Rum Punch too!

  • 1 bottle Rosé sparkling wine
  • 1/2 cup vodka birthday cake or vanilla flavored
  • 2 cups fresh strawberries sliced
  • 1/4 cup strawberry puree optional
