Caramel-Stuffed Cookies

These caramel stuffed cookies are soft, chewy white chocolate chip cookies with a whole caramel square baked right into the center. The from-scratch cookie dough is made with simple ingredients, so it’s an easy recipe, but the caramel surprise makes them a special treat!

Fresh from the oven, every bite has buttery cookie, creamy white chocolate, and rich, melty caramel. They’re great for gifting, holidays, or any occasion that calls for something sweet and when you want a cookie that’s unique and extra delicious!

Ingredients

  • Dairy: Butter
  • Refrigerated: Eggs
  • Dry Goods: Granulated sugar, brown sugar, vanilla extract, all-purpose flour, baking soda, salt, white chocolate chips, caramel baking bits, soft caramel squares

Instructions

  1. Cream together butter and sugars in a large mixing bowl with an electric mixer for 2 minutes, until light and fluffy. Add vanilla extract and eggs and continue beating for another minute.
  2. In a separate medium-sized bowl, whisk together the flour, baking soda and salt. Add half of the flour mixture into the butter mixture, incorporate fully, then add remaining half and beat until combined.
  3. Fold in the white chocolate chips and caramel baking pieces.
  4. Chill dough in the refrigerator for 1 hour.
  5. Preheat oven to 375 degrees Fahrenheit.
  6. Use a medium cookie scoop to portion out dough, wrapping each dough ball around an unwrapped caramel square.
  7. Bake for 8-12 minutes, until lightly golden brown.
