No Bake Apple Pie Icebox Cake
I love a good icebox cake because they’re simple, nostalgic, and delicious. This apple pie version keeps things super easy…just four ingredients layered together and chilled until everything sets into a cool, creamy dessert. No baking, no complicated steps, just a straightforward recipe that comes together quickly and works every time!
The flavor is exactly what you’d hope for: soft layers, creamy filling, and that classic apple pie flavor in every bite. It tastes like a decadent apple pie à la mode, but in a chilled, sliceable dessert!
This is a great make-ahead dessert, so it is especially handy for occasions when you’re short on time but still want to whip up something special. Whether you’re bringing dessert to a summer cookout, a potluck, or even a fall gathering, this is one of those recipes that fits right in and gets finished quickly!

Instructions
- Fill the bottom of the dish with a layer of graham crackers.
- Gently spread a layer of Cool Whip on top of the graham crackers.
- Add a layer of apple pie filling (it’s ok if you can still see a little bit of the Cool Whip).
- Repeat until the dish is full, finishing with apples on top. Chill in fridge until ready to serve and then top with a drizzle of caramel sauce.

Prep Tips
- Whipped Topping – For this recipe, I recommend using a stabilized whipped cream or whipped topping, so it will hold up better.
- Make-Ahead – This is a great dessert to prepare ahead of time, even a day before you plan to serve it. The extra chill time in the fridge lets the flavors really meld together and everything tastes creamy and delicious. Wait to add the caramel drizzle until ready to serve.

- Storage – Keep leftovers covered in the refrigerator for up to 3 days. After that it may start to get a little soggy.
