Copycat Chipotle Corn Salsa

Roasted Chili Corn Salsa (Chipotle Copycat)

If you’ve been looking for a recipe for Chipotle corn salsa, I’ve got you covered! This easy corn salsa recipe is a spot-on copycat, made with delicious roasted corn and zesty citrus dressing. It’s great for taco night, potlucks, or anytime you want to add a kick of flavor with just a little bit of heat.

When I was in college, Chipotle Mexican Grill was one of my go-to spots for a filling and semi-healthy meal. I loved the Burrito Bowls because I could pile on all the yummy veggies I wanted! Chipotle has several different kinds of salsa options, but my favorite was their corn salsa. It’s sweet, tangy, and just the right amount of mild heat. In fact, it’s one of Chipotle’s mildest salsas.

This stuff is so good you can eat it all on it’s own as a side dish! It also adds a yummy pop of flavor to salads, tacos, grilled chicken, you name it! And of course, it’s perfect for dipping tortilla chips.

Ingredients

  • 24 oz corn kernels (either yellow corn or sweet white corn will work great)
  • 1/2 cup diced red onion
  • 2 jalapenos, deseeded and diced
  • 1/4 cup cilantro, chopped
  • 1 Tablespoon fresh lemon juice
  • 1 Tablespoon fresh lime juice
  • Salt, to taste

Instructions

  1. Roast the Corn – We toasted our corn in the air fryer for 4 minutes. You could also char the corn in a skillet on the stovetop. If you’re in a pinch for time, you can skip this step, as the salsa will still taste fantastic.
  2. Combine Ingredients – Add the corn to a large bowl, along with the red onion, jalapeños and cilantro.
  3. Season – Add the lemon and lime juices and salt, stirring to distribute evenly.
  4. Taste and Adjust – I always recommend tasting homemade salsas and dips before serving so you can adjust the flavor to your personal preferences. You may want to add more salt, a sprinkle of black pepper, etc. Refrigerate until ready to serve.

Prep Tips

  • Corn – You can use either fresh corn or frozen corn for this recipe. If using fresh corn, carefully chop the kernels off the cob and into your mixing bowl. If using frozen, you’ll want to thaw first.
  • Jalapeño – If you like the flavor of jalapeños, but not the heat, soak them in water for about an hour after de-seeding. This helps pull out some of the spice. You may also be able to find “heatless” jalapeño peppers at the store…it’s a thing!
  • Substitutions – Poblano peppers can be used in place of the jalapeño peppers to get that pepper flavor, without as much heat. If you don’t have lemons on hand, you can simply use lime juice alone for the citrus flavor.
  • Storage – Keep any leftovers in an airtight container in the fridge for up to 3-4 days.
